Best cooked low and slow, it is reminiscent of a brisket, which although tough if grilled on high heat, turns into decadent, rich, beefy morsels when cooked low and slow. 

Beef cheeks are awesome to use for tacos, pasta dishes, or even on a sandwich. You can smoke it, braise it, roast it, sous-vide it and try all different types of marinades and rubs, or even just with salt and a little pepper to finish. Its flavor will always be the star of the show!

WHY IS OUR DOMESTIC WAGYU BEEF CHEEKS BEST IN CLASS?

We work with what we consider to be the best Wagyu program in the US. This program processes a small amount of steers every week (140-175) which allows them to put care into every steer. These beef cheeks come from a mid-sized family owned company that puts a lot of care into each cut.

We have compared this program to others from major chains and stores, and we find that it consistently tastes better and eats better. This may be because these animals are fed for longer and at a slower phase than what you will find with other wagyu brands. The genetics of their animals are superior as well since they’re very selective with the bulls they use from Japan (Japanese Kuroge Tajima bull).

HOW TO COOK BEEF CHEEKS

Beef cheeks are best when cooked slowly, which allows the tough connective tissues to break down into gelatin, enriching the cheeks with succulent flavors and a melt-in-your-mouth texture.

Braised Wagyu Beef Cheeks:

  1. Preparation: Begin by seasoning the beef cheeks with salt and pepper. Sear them in a hot pan with a bit of oil until they are well-browned on all sides. This step is crucial as it develops a deep flavor base.
  2. Braising: Transfer the cheeks to a slow cooker or a Dutch oven. Add aromatics such as chopped onions, carrots, and celery, along with herbs like thyme and a bay leaf. Pour in enough beef broth and a splash of red wine to cover the meat halfway.
  3. Cooking: Cover and cook in a preheated oven at 325°F (163°C) or in a slow cooker on low heat for about 6-8 hours. The goal is for the beef cheeks to become tender enough to be easily pierced with a fork.
  4. Final Touches: Once cooked, you can thicken the braising liquid with a bit of flour or cornstarch to create a rich, flavorful sauce. Adjust seasoning with salt and pepper to taste.
