Capocollo
What Is Capocollo?
Capocollo is a traditional Italian and Corsican pork cold cut (salume) made from the dry-cured muscle running from the neck to the fourth or fifth rib of the pork shoulder or neck. It is a whole-muscle salume, dry cured, and typically sliced very thin. Capocollo also goes by the terms Coppa, Cotto, or Gabagool.
Our Capocollo is well marbled, whole muscle meat. Seasoned with multiple spices for a rich flavor.
We looked all over to find the best-tasting Capocollo. We settled for Nyman's.
