Irish Breakfast Tea (ounce)
Irish breakfast is a blend of several teas and because it has no set formula the actual flavor profile can vary from tea supplier to tea supplier. The base of Irish Breakfast tends to be an Assam tea from the Assam region of India and the second tea can sometimes be from China (Yunnan or Keemun), Ceylon or Kenya. When Ireland began direct importing its own tea the favorite daily tea contained almost exclusively Assam but then in the early 1960’s Ceylon (also known as Sri Lankan) teas were added to the blend. Over the last 50 years Ceylon tea has been replaced by high quality black tea from Kenya. The strength of our version of Irish Breakfast tea comes from combining the best teas available from seasonal production periods harvested from ultra-premium tea estates located in Assam and Kenya. The Assam teas are from the 2nd flush growth during June while the Kenyan teas are from the February and August period. Assam’s 2nd flush is best noted for its deep rich malty astringency while the seasonal Kenyan provides a golden coppery color with floral undertones that provide elegance and complexity to this tea blend. Steep at 212° for 3-5 minutes. Caffeine level is medium. 1 oz of tea produces approximately 12 cups.
