In the port town of Jerez, in Andalucia - the sunny, south side of Spain - a small handful of traditional producers apply the same solera system used to create the region's diverse and complex wine to make an artisanal, expressive sherry vinegar. By gradually blending and aging Palomino grape must from one row of small oak barrels to the next over decades, they cultivate a vinegar with rich flavor and body.
