Advieh (pronounced advie) and also known as adwiya, is a Persian spice blend used to flavor bean, chicken and rice dishes. Persian cuisine has a long history and has influenced cuisines in Afghanistan, India, Iraq, Russia and Turkey. Persian cooks are masters at cooking with dried fruits, herbs and nuts and the main dishes are grilled meats, slow cooked stews, rice and yogurt. Slow simmered stews are typically served over rice and with flat breads. The flavor profile is warm with spicy yet mild cinnamon notes, aromatic from the cardamom and a bit floral from the ground rose petals.
