Cinnamon has long been the most popular baking spice in most cultures throughout the world. Cinnamon’s subtle, yet intense flavor is ideally suited for cakes, breads, cookies, pastries, ice cream and we are particularly fond of it in our morning oatmeal. Ground cinnamon tends to be paler in color while also possessing a finer quality but it loses it flavor much quicker than does the cinnamon sticks. Many folks will buy cinnamon in the stick form and use a spice grater for maximum flavor. This thick quilled cassia is imported from Indonesia and is reddish-brown in color and pungently sweet. Unlike ceylon cinnamon, these cinnamon sticks are harvested from outer tree bark, which is then dried in quills and they produce a much more rigid texture and darker color than the ceylon sticks. With this being sold by weight you will get approximately seven 2-3/4" cinnamon sticks per ounce.
