This Tsuchime (hammered) Damascus Santoku is a great alternative for those who prefer a blade shorter than a chef's knife that can perform most of the same tasks. Useful for chopping fruits and vegetables or precisely slicing proteins. These blades are individually made resulting in a pattern unique to each knife.
Similar in weight to many German knives, this knife is popular among people who want a western handle and a Japanese blade. This knife features a full tang, three rivet handle. With its fine grain structure and great durability, VG10 is one of the best modern stainless blade steels. Seventeen layers (VG10 steel clad with 8 layers of softer steel on each side) of Damascus stainless steel. The hand hammered (tsuchime) finish helps release food from the blade and makes each knife unique.
