The Usuba is a traditional vegetable knife with a tall thin blade. An ideal all-purpose knife that can easily peel, slice, chop and mince. This particular knife is the Azumagata style.
Ginsan (Silver 3) steel is a perfect blend for professional and home use. These are very durable traditional knives without the exacting care needed for carbon steel. Each Ginsan knife is hand forged and hand assembled by traditional craftsmen. Ginsan knives are some of the finest knives available in modern knife making but are difficult to forge which causes their price to be premium. These are handmade knives using the highest quality high carbon steel for best results with Ginsan knives we recommend sharpening by hand on whetstones.
Ginsan blades are hand forged from two layers with the harder Ginsan making up the edge and a softer stainless for the tang. This makes the knife easier to sharpen and care for.
